Bacon Pasta

This is SUPER yummy! In my opinion it could use more garlic but other than that it's darn near perfect!

SERVES 4-6
Ingredients

1 (16 ounce) package penne pasta
12-15 slices bacon
1/2 cup sliced fresh mushrooms
2 garlic cloves, minced
1 cup grated parmesan cheese NOT THE JAR STUFF!
2 cups whipping cream
1/2 teaspoon pepper
1/2 cup sliced green onion

Directions

1. Cook pasta according to package directions; set aside.
2. Cook bacon in large skillet over medium heat until crisp; remove bacon; reserve 2 T. drippings in skillet.
3. Crumble bacon and set aside.
4. Saute sliced mushrooms and garlic in reserved drippings 3 minutes or until tender.
5. Stir in pasta, parmesan cheese, whipping cream, and pepper; simmer over medium-low heat until sauce is thickened, stirring often.
6. Stir in bacon and green onions; serve immediately.

When we were kids my mom used to make a yummy dinner with penne pasta, bacon, canned tomatoes and velveeta cheese. I have always wanted to recreate this dish, but without all the labor. One day I discovered Classico's brand "Sun Dried Tomato Alfredo" sauce. I decided to give that a try. Crumble in just a few slices of cooked bacon and mix with prepared penne pasta. It's almost exactly the taste that I remember having as a kid. And mine is so much easier than mom's version when she had to cut up her own cheese. I watch for Classico to go on sale and then I stock up!! Mmmm... Things go better with bacon!
